A delightful one-pan dish featuring tender chicken, crispy bacon, and hearty potatoes, all enveloped in a creamy ranch dressing. It's an ideal choice for a weeknight dinner.

1 lb chicken breasts, diced into bite-sized pieces
4 large potatoes, peeled and cubed
6 slices of bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
1 cup shredded cheddar cheese
½ cup ranch dressing
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Chopped green onions for garnish
Additional shredded cheese (optional) for garnish
Instructions
In a large cast iron skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon and set aside.
Add the diced onions to the skillet and sauté in the bacon grease for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
Increase the heat to medium-high. Add cubed potatoes, seasoning with garlic powder, onion powder, salt, and pepper. Cover and cook for about 10-15 minutes until tender and golden brown.
Push the potatoes to one side of the skillet. In the cleared space, add the diced chicken and cook for about 5-7 minutes until no longer pink in the center.
Reduce heat to low, pour ranch dressing over the chicken and potatoes, sprinkle crispy bacon on top, and mix everything together. Cover and cook for 2-3 minutes until the cheese is melted.
Remove from heat and let sit for a couple of minutes. Garnish with chopped green onions and additional cheese if desired before serving.
