Ingredients

- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, freshly ground
- 1 cup chicken broth, low-sodium preferred
- 1 cup heavy cream
- 1 tablespoon garlic, minced (approximately 3 cloves)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 tablespoon Dijon mustard
- 1 medium onion, chopped
- 2 cups carrots, sliced
- 2 cups broccoli florets (fresh or frozen)
- Fresh parsley, chopped (optional)
Instructions
- Season the chicken breasts with salt and black pepper.
- Place the seasoned chicken breasts at the bottom of the slow cooker.
- In a mixing bowl, whisk together the chicken broth, heavy cream, minced garlic, dried thyme, dried oregano, and Dijon mustard until well combined.
- Pour the creamy sauce over the chicken in the slow cooker.
- Add the chopped onion, sliced carrots, and broccoli florets on top of the chicken and sauce.
- Cover the slow cooker with its lid and cook on low for 6-7 hours or on high for 3-4 hours.
- Once cooked, carefully remove the chicken breasts from the slow cooker and shred them using two forks.
- Serve hot, garnished with fresh parsley if desired.
