  1. Season the chicken breasts with salt and black pepper.
  2. Place the seasoned chicken breasts at the bottom of the slow cooker.
  3. In a mixing bowl, whisk together the chicken broth, heavy cream, minced garlic, dried thyme, dried oregano, and Dijon mustard until well combined.
  4. Pour the creamy sauce over the chicken in the slow cooker.
  5. Add the chopped onion, sliced carrots, and broccoli florets on top of the chicken and sauce.
  6. Cover the slow cooker with its lid and cook on low for 6-7 hours or on high for 3-4 hours.
  7. Once cooked, carefully remove the chicken breasts from the slow cooker and shred them using two forks.
  8. Serve hot, garnished with fresh parsley if desired.
