Homemade Smothered Ground Beef Burritos are the ultimate comfort food, perfect for family dinners or meal prep. These burritos are filled with seasoned ground beef, topped with a rich smothered burrito sauce, and gooey cheese, creating a mouthwatering dish that everyone will love.
Ingredients

1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper, to taste
4 large flour tortillas
1 cup shredded cheese (cheddar or Mexican blend)
1 can (15 oz) black beans, drained and rinsed (optional)
1 cup cooked rice (optional)
1 can (10 oz) red enchilada sauce
1 cup diced tomatoes with green chilies, drained
1 tablespoon olive oil
Chopped fresh cilantro
Sour cream
Sliced jalapeños (optional)
Fresh avocado slices
Instructions
In a large skillet, heat a medium flame and add 1 tablespoon of olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.
Stir in the minced garlic and cook for another minute until fragrant. Add the ground beef, breaking it apart with a wooden spoon and cook until browned, about 6-8 minutes.
Season the beef mixture with chili powder, cumin, paprika, salt, and pepper. If using, fold in the black beans and cooked rice.
In a small saucepan, combine the red enchilada sauce, diced tomatoes with green chilies, and 1 tablespoon of olive oil. Heat until warmed through, about 5 minutes.
Lay out each flour tortilla, spoon a generous amount of the ground beef filling onto each, and sprinkle with shredded cheese.
Fold in the sides of the tortilla and roll it up tightly. Place the burritos seam-side down in a greased baking dish.
Preheat your oven to 350°F (175°C). Pour the smothered burrito sauce over the top and sprinkle additional cheese if desired.
Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
Let cool for a few minutes before serving. Top with fresh cilantro, sour cream, avocado slices, and jalapeños if desired.
